to the cup
We know the farmers, we see how they work. This is important for us in order to know how to treat the raw material.
When you select coffee by hand you have to remove imperfect drupes: just one of them can damage the whole batch. These flaws (unripe or too ripe berries) in industrial products are eliminated through a really dark toasting. But by doing so, the qualities of the coffee are eliminated too.
We stay outside from industrial dynamics.
It may happen that we order only one coffee bag when standard industrial shipments are calculated in containers.
Ethics and quality
Fortunately, during the last 20 years, a new sensitivity regarding sustainable farming has been developed, and this attention has saved the small farmers who have always supplied us. Betting on them was a forward-looking choice.
Recently we are particularly focused on Rainforest Alliance certified products and we appreciate how seriously this non-profit organization operates internationally. We share their mission, that is to protect biodiversity in the cultivations and improve the quality of the farmer’s family life.
There are no commercial tricks: Rainforset Alliance is a concrete operation. It constantly verifies the efficacy of its investment in the territory, always directed to the community. It is about organic and fair trade. It is all about this. We do not need any organic farming sticker, because for our farmers working while respecting biodiversity is not an exception, it is the only way they know.
Certifications do not have to hide our mission: our first guarantee is and remains quality.
